Ingredients
0,80 kg | chicken breast |
4 slices | home-made bacon |
8 | sage leaves |
12 slices | zucchini |
12 slices | eggplant |
1 | red capsicum |
1 | yellow capsicum |
1,5 cl | olive oil (extra virgin) |
pinch of | salt |
pinch of | grounded pepper |
Procedure
- Wash and dry meat and salt a little. Place sage leaves on both sides and wrap into bacon. Wash and dry vegetable, take out the core of capsicums but leave the green stalk. Slice to 1cm thick, cut capsicum into 6 parts. Do not salt nor pepper the vegetable to keep the juice inside and to keep the shape of the slices.
- Heat the grill to approx. 210 ºC (5th part on the thermostat scale), rub them by olive oil and place meat and vegetable on it. Grill 7 minutes on each side.
- Take out vegetable, season with salt and pepper and rub by olive oil if needed.
