4 trout
4 sprigs of fresh thyme
4 sprigs of large-leaf parsley
2 leek leaves
1 lemon, salt, ground pepper
150 g of butter
2 tablespoons of smooth flour


  • Clean and dry the trout then salt and pepper the inner cavity.
  • Wash the fresh herbs under running water, dry them and tie them into the leek which is then placed inside the trout with a slice of butter. Sprinkle flour over the trout prepared in this way.
  • Preheat the grill to 220°C (SEAR position), heat the remainder of the butter and grill the trout on both sides until golden brown.
  • Salt and pepper only at the end after grilling.
